Chicken and Chorizo Tray Bake

This recipe is Mr T’s new favourite!

It’s easy to throw together, really tasty and is lovely to look at too.

You can use chicken breasts for this recipe but I prefer legs / thighs / drumsticks. Mainly because the meat doesn’t dry out so easily, but also because you get some lovely crispy skin with it! Once the meat is cooked the bones just slide out, so you don’t need to worry about those.

Top tip – The chorizo element is optional. I love chorizo so I put in quite a lot, but its completely up to you. If you can get the small cooking chorizo sausages, they are best as they soften up in the oven rather than go chewy, but it’s all a matter of taste.

Ingredients – Serves 4

8 Chicken thigh or drumstick portions OR 4 whole leg portions
2 Red Onions – cut into wedges
2 red peppers – roughly chopped
A handful of cherry tomatoes
Chorizo – to taste – chopped into bitesize chunks
8 – 12 new potatoes – halved
2 cloves garlic
Salt and Pepper
Olive Oil

Method

Put all the veg in a large roasting tray, drizzle with Olive Oil and toss around to ensure its all coated. Season with salt and pepper and add the garlic and chorizo. Ensure everything is evenly distributed. If your tray is small, you may need to use two.

Place the chicken pieces on top of everything, wiggling them a bit to push them into the tray. Drizzle them with oil and season with salt.

Place into the oven at 190 for about 40 mins. If they’re looking a bit pale after this time, give them a blast at 220 for a further 5-10 mins.

Serve with green beans or salad, with the tray juices spooned over the top. Delicious!

HAPPY NEW YEAR!!! (Belated!)

Readers, I’m so sorry I’ve been AWOL for a while! Christmas, New Year, a new job and various other factors mean I haven’t been able to blog for a while.

However, I have been cooking up a storm in Rod’s Kitchen and have lots of lovely recipes for you!

Also, a lovely friend of mine gave me a book on blogging for Christmas, so watch this space for a new, improved RodsKitchen!
